Muddle the base. In a sturdy glass or cocktail shaker, muddle the diced green apple and ginger. Add water, lime juice, and honey (if using). Optional: Let sit for five minutes to extract more flavor.

Strain & pour. Strain the mixture into two glasses, dividing evenly.
