Method

  1. Toast pecans & oats. In a dry skillet, toast pecans over medium heat for 3–5 minutes until fragrant. Cool, then chop finely. Dry-toast oats in the same skillet for 3–4 minutes until lightly golden.

  2. Make the paste. In a food processor, blend dates, maple syrup, vanilla, salt, pumpkin spice and Daily Elements until sticky and mostly smooth. Scrape sides with a spatula before adding dry ingredients.

  3. Add dry ingredients. Pulse in oats and chopped pecans until well combined. Add nut butter if the mixture feels too dry. Note: mixture will appear loose but will form into a ball when pressed. Test before adding extra nut butter.

  4. Form balls. Using an ice cream scoop, scoop and roll into ~1-inch balls, pressing firmly. If sticky, chill mixture 10–15 minutes before rolling.

  5. Chill & store. Store in an airtight container in the fridge for up to 1 week or freeze for longer.

Notes & Variations

  • Extra festive: Roll balls in chopped pecans or a dusting of pumpkin spice.

  • Toast or no toast: Toasting adds a warm nutty flavor to this recipe. You can skip it for ease, but the flavor and texture will be slightly different. 

  • Add fiber: Mix in 1–2 tbsp ground flaxseed
