Harvest Apple & Walnut Salad with Lemon Tahini Dressing

Roast Sweet Potato. Preheat the oven to 400°F. Peel and cube sweet potato. Toss in oil, salt, pepper and cinnamon. Bake for 30-40 minutes. Let cool.

Make a quick pickle. Slice red onion thinly. In a container, combine red wine vinegar, salt, and honey. Submerge onions. Cover and let stand at room temperature.

Make the dressing. In a small bowl or jar, whisk together tahini, lemon juice, olive oil, and honey/maple syrup. Add water gradually until dressing is creamy but pourable. Stir in Daily Elements and season with salt and pepper.

Make dressing: Using a whisk, combine all dressing ingredients. Use water to adjust the consistency.

Massage the kale. Place kale in a large bowl and drizzle with 1 tbsp. dressing. Massage with hands for 1–2 minutes until softened.

Assemble the salad. Add sliced apples, goat cheese, and toasted walnuts to the kale. Layer in cooled roasted sweet potatoes and quick pickled red onions.

Serve. Drizzle with remaining dressing and toss to combine. Top with extra walnuts or goat cheese if desired.
